After eighty-three years, Tsukiji Market ceased operations last month. A small standing soba noodle shop sits on a street just outside its former walls. Even before dawn, the shop is filled with customers. Men who work at the market are there, slurping noodles in preparation for the day’s auction and the work ahead. Some have called Tsukiji home for years; others have found themselves there through a variety of paths. What significance did the market hold for these workers? Over the final three
